Cocina Americana: Pumpkin Pie

pumpkin: /pumkɪn/ Una calabaza grande, redonda, y anaranjada.

boil: /bɔɪl/ hervir

pour: /pɔər/ verter

Pumpkin pie is a winter tradition in the United States. It’s simple to make, and delicious. The only difficult part is preparing the squash.

First you need to get a pumpkin. Here in Spain there aren’t many of the classic orange pumpkins, so I use a normal squash, about 850 grams (although the recipe is a bit flexible). Cut the skin off the squash and take out the seeds. Cut it up into 2cm cubes.

Afterwards, boil the squash in a little water for about half an hour until it’s tender.

Drain the water out of the squash and put it in a bowl. Mix in 3/4 cup packed brown sugar, 3 eggs, and 1 cup light cream. Also use some spices: cinnamon, cloves, and nutmeg, just a little bit of each.

You can use a pre-made pie crust (masa de hojaldre), it is available in the Corte Inglés and other supermarkets. Put it down in the pie pan, pour the pumpkin mixture in, and bake it at 175 C for 50-55 minutes until it’s solid like a pudding. Let it cool for a few hours before eating.

Enjoy!
